Beginner photographer, traveling, needs advice?

Okay so I'm leaving to go to Europe next week and I want to be able to take beautiful pictures but I suck. I have a gopro that I barely get any use out of simply because I forget.

I was thinking about getting a polaroid camera because it would be quick and easy. Any recommendations or advice?

Should I just stick to my iphone?
