How to do a time lapse photography for flowers?


I plan on doing a time lapse of a flower wilting or opening for photography and I was wondering how I might go about it. Which at this time of year is better to study- wilting or opening? How often photos need to be taken and what kit to use. I have a Canon EOS 700D and a standard 18-55mm lens as well as a Sigma 100mm lens. I looked into buying a Canon TC-80N3
Timer/Remote Controller as I have a 40D available to use or buying a gopro and just doing a straight out video? It's for my coursework and any help would very much appreciated.
