Which camera on the market would be a good fit for me?


I'm a 20 year old female who spends a lot of time outdoors and near some gorgeous locations in and around California. I am almost legally blind, so using my cell phone or the under $200 point-and-shoots I've picked up over the years are the only ways I'm able to see the detail in any of the beautiful sights I'm lucky enough to see.
I am by no means a photographer; I know very little about photography itself and can't even really say I have an outstanding interest in it. I am, however, eager to invest in good equipment and put in whatever effort necessary to adequately document the places I go. I simply have no idea where to start.

Here's what I do with what I have now:

- take pictures of nature and wildlife
- record video for sporting events, concerts, in nature, for creative projects (a lot of chroma key), personal videos
- mount my device to document places I go while riding my bike

A lot of people tell me to get a GoPro, but I'm only hesitant because of the fisheye effect. Then again, I really don't know what I'm talking about, haha. For those of you with real experience and knowledge, what would you recommend for a begginer like me who just wants to do her experiences justice? I obviously can't currently afford a $3,000+ camera or anything like that, but I'm somewhat aware if average pricing and am prepared to put away money for this as a long-term investment.
